/Last week I baked these gluten-free carob cupcakes with peanut butter frosting and since they were so delicious I want to share the recipe with you! It was the first time I baked with the carob powder I got in my ”The healthy box”, but not the last time since it was so yummy. Lovely! To make 5 big cupcakes or 10 small cupcakes, you need 50 g butter, 1 egg, 1 dl sugar, 1,5 dl almond flour, 2 tbsp carob powder, 3 tbsp organic peanut butter, 1 tsp baking powder, 1 tsp vanilla powder plus a hint of salt. Mix the ingredients as you always do and bake the cupcakes in the oven on 200 degrees for 8-15 minutes. While the cupcakes are in the oven you can make the frosting and I used this recipe (it is so delicious). When the cupcakes has cooled down, add the frosting and then they’re ready to eat!
