GLUTEN AND DAIRY FREE MUFFINS
- 2 medium ripe bananas ( två mogna bananer)
- 1/3 cup honey (106 g honung)
- 2 tsp vanilla extract ( 2 tsk vanilj extrakt)
- 2 eggs (2 ägg)
- 1/4 cup refined melted coconut oil (56 g kokos olja)
- 2 cups almond flour (200 g finkornigt mandel mjöl)
- 3 tbs coconut flour (27 g kokos mjöl)
- 1 tsp baking soda (1 tsk bakpulver)
- 1/4 tsp salt ( 1/4 tsk salt)
- coconut shreds as topping
Preheat the oven tp 350 F (175 C) and line a muffin tin with about 12 muffin liners.
In a large bowl, mash the bananas they should almost be like a puree then add all the other ingredients and mix together to a even batter and then spoon the batter into the muffin liners. Bake for around 18-20 min and take them out and then let them cool for 5 min.

Sätt ugnen på 175 grader Celsius och lägg upp ett par muffins formar på en plåt. I en stor skål, mosa bananerna så dom blir som en puré och sedan addera resten av ingredienserna och blanda till en jämn smet. Ta sedan en sked och dela upp smeten i muffins formarna. Baka i mitten av ugnen i ca 18-20 min och låt dom sedan stå och svalna i 5 min.
Are you doing gluten free just because or do you need to? Every doctor I’ve talked to has always said you shouldn’t eat GF if you don’t have to. My mom had Celiacs so she had to. It is extremely expensive.
I’m both sensitive to gluten and dairy so i try not to eat it, even tho i still do once in a while i just feel better when i don’t.
